The executive chef Geno Bahena began in Chicago during the late ’80s, working in the Frontera kitchen of Rick Bayless. Since then, Bahena has been chef at Chilpancingo and Ixcapuzalco. Seven classic moles from the region of Oaxaca are made from scratch. One is featured each night of the week.
